EPISODE 003 - Max & Juliana Gambirazio of Papachay Coffee

Max and Juliana Gambirazio are the owners of Papachay Peruvian Coffee in San Carlos, CA.

Max tells us about his origins of immigrating to the US. On a trip back to Peru, his motorcycle broke down in the rainforest and a chance to buy a 30 acre coffee plantation arose. Juliana, Max's wife from Saul Paulo Brazil, also joins us on the podcast telling us about her love for coffee since she was a little girl and how she met Max through the coffee business. We talk about the coastal cuisine where Max is from and many countries influencing the dishes. Max and Juliana are great cooks and share many of their favorite home cooked meals.

Papachay is a true single origin coffee grown at 1700 meters above sea level. Max explains building the coffee farm compound , obtaining a wet mill, huskers, oxidation tanks and getting the meticulous coffee process going. Max and Juliana break down the intricate process for us going from fruit to roasted bean ready for coffee all while taking care of the land it’s grown on.
