CHEESY CAULIFLOWER
Ingredients:
1 whole cauliflower
Few leaves of fresh basil finely chopped
2 TBSP Avocado mayonnaise
3-4 TBSP shredded Parmesan cheese
1 tsp lemon juice
Sea salt and pepper (to taste)
1 TBSP Montana Mex Chili Seasoning
Directions:
Clean leaves and cut the bottom off of cauliflower.
Boil or steam whole in salted (1 Tbsp) water for approximately 20min or until fork tender ( I used a wood skewer to test it, it should go all the way through smoothly)
Then transfer the whole cauliflower onto a baking sheet lined with foil or parchment.
Brush avocado mayonnaise all over. Add Montana Mex chili seasoning, chopped basil, and cracked pepper. Sprinkle shredded cheese over and do your best to get it to stick or stay on cauliflower.
Roast for 10min at 400 degrees or until golden brown turning halfway through to get it evenly cooked all around. You can use the broiler but, be careful not to burn it. Broil on HIGH with constant eyes on the prize, turning as needed.
Slice it up, and add additional avo mayonnaise on the side (with 1tsp lemon juice stirred in) & garnished with Montanamex chili.
